Thai Style Vegan Stir Fry with Broccoli and Tofu

Vegetarians and vegans, you can never have too many vegetable stir-fry ideas, am I right? This recipe calls for tofu and plenty of vegetables, including green beans, broccoli and bell pepper stir-fried with a bit of like, garlic and lemongrass for a subtle Thai flavor. 

Ingredients:

  • 3 tbsp peanut or sesame oil
  • 1/2 block tofu, cut into small cubes
  • 3/4 cup green beans, sliced
  • 3/4 cup carrots, thinly sliced
  • 1 cup broccoli, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green chilies, minced
  • 4 cloves garlic, minced
  • 2 stems lemongrass, sliced thin
  • 2 tbsp lime juice
  • dash salt, to taste

Preparation:

Sautee the tofu in oil until lightly golden, about 5 minutes. Add the vegetables and stir-fry for a few more minutes, until veggies are cooked.

Add the remaining ingredients and cook for another minute or two. Serve over rice if desired.

This easy Thai stir-fry recipe is both vegetarian and vegan.
