Maple Pecan Tofurky Roast

Tofurky, a mock turkey roast that is vegan as well as vegetarian, has been gaining in popularity as the centerpiece of a vegetarian Thanksgiving meal. Here's one way to spruce up your Tofurky with a sweet and spicy maple glaze for your vegetarian Thanksgiving guests. Recipe courtesy of Turtle Island Foods. See also: More Tofurky Recipes.

Ingredients:

  • 1 Tofurky roast, thawed and unwrapped
  • 1/3 cup maple syrup
  • 1/4 cup soy sauce or tamari soy sauce
  • 2 tbsp red wine vinegar
  • 2 tbsp Chinese or regular chili paste
  • 8 cloves garlic, crushed
  • 1/2 tsp Chinese 5-spice powder
  • 2 cups pecan pieces

Preparation:

Preheat oven to 350 degrees.

In a small bowl, whisk together maple syrup, soy sauce, red wine vinegar, chili paste, garlic and 5-spice powder. Pour over Tofurky, coating all surfaces. Cover and refrigerate for at least 4 hours.

Drain Tofurky, reserving marinade and place on a rack in a large shallow roasting pan. Roast for 45 minutes, basting occasionally with maple syrup marinade.

While the roast is in the oven, toast pecan pieces in heavy skillet over low-medium heat until lightly toasted and set aside.

After removing from the oven, allow Tofurky roast to sit for 10 minutes before serving with your favorite vegetarian gravy. Sprinkle with toasted pecan pieces.
