Low-Fat Vegetarian Split Pea Soup with Chipotle Peppers

Split-pea soup with spicy chipotle peppers add the flavor of Mexico to this healthy and low-fat vegetarian split-pea soup recipe. Although the split peas do take a while to cook, this split-pea soup is actually quite easy to prepare, as you don't need to be hovering over the stove stirring it constantly. Ingredients:

  • 2 cups split peas, uncooked
  • 8 cups water or vegetable broth
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced thin
  • 1/3 cup chopped fresh parsley
  • 1 chipotle pepper, minced or 1 tsp chipotle powder
  • 2 tbsp soy sauce

Preparation:

In a large pot, simmer the split peas in the water or vegetable broth until soft, about one hour.

Add the remaining ingredients, and allow to simmer at least another 20 minutes, or until vegetables are soft.
