Ingredients:
- 2 cups split peas, uncooked
- 8 cups water or vegetable broth
- 1 onion, chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced thin
- 1/3 cup chopped fresh parsley
- 1 chipotle pepper, minced or 1 tsp chipotle powder
- 2 tbsp soy sauce
Preparation:
In a large pot, simmer the split peas in the water or vegetable broth until soft, about one hour.Add the remaining ingredients, and allow to simmer at least another 20 minutes, or until vegetables are soft.
