Spinach and Mascarpone Soup

Spinach and Mascarpone Soup

INGREDIENTS:

  • 2 tbsp margarine
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 3 cups fresh spinach
  • 3 cups vegetable broth
  • 1 cup mascarpone cheese
  • salt and pepper to taste

PREPARATION:

In a large saucepan, sautee the onion and garlic in the margarine for 3 to 5 minutes, until onions turn soft.

Add the spinach and the vegetable broth and bring to a boil. Reduce heat, then bring to a simmer.

Cover, and allow to cook for 15 minutes.

Transfer the mixture to a blender or food processor and process until smooth, then return to the saucepan.

Over low heat, add the mascarpone cheese and stir until melted. Add a dash of salt and pepper and serve immediately.
