Ingredients:
- 1/2 tsp margarine
- 1 pound snow peas, trimmed and chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 1 small leek, chopped
- 4 cups water
- 1/2 bay leaf
- 1 tsp Tofutti Better Than Cream Cheese vegan cream cheese
- 1 tsp Tofutti Sour Supreme vegan sour cream
- pinch of thyme
- salt and pepper to taste
Preparation:
Melt margarine in pan and add 1/4 cup water. Add vegetables and cook gently for 20 minutes.Add water and celery stalks. Simmer gently for one hour.
Place in food processor or blender; puree and strain through strainer. Adjust consistency and finish by whisking in Tofutti Better Than Cream Cheese and Sour Supreme vegan sour cream.
