Vegetarian Chinese Hot and Sour Soup

Chinese hot and sour soup

Chinese Hot and Sour Soup is a light meal or accompaniment eaten any time of day. My Taiwanese roomate in college used to prepare this hot and sour soup recipe for breakfast on occasion, and I heartily ate it up! This recipe is both vegetarian and vegan. Hot and sour soup is somewhat light, so feel free to add in some fried tofu or seitan.

Ingredients:

  • 6 cups vegetable broth
  • 2 cups mushrooms, sliced (Chinese wood ear mushrooms or shiitake are best)
  • 1 small can bamboo shoots
  • 1 small can water chestnuts
  • 2 tbsp soy sauce
  • 1/2 tsp pepper
  • 1 tsp hot sauce
  • 2 tbsp vinegar
  • 3 cloves garlic, minced
  • 1/2 cup scallions (green onions), sliced
  • 2 tbsp chili oil

Preparation:

Bring vegetable broth to a simmer and add all the ingredients, except the scallions and chili oil.

Allow to simmer for at least 20 minutes.

Add the scallions and simmer for about 5 more minutes. Stir in the chili oil.

Add additional soy sauce, hot sauce or vinegar to taste.

Enjoy your vegetarian Chinese hot and sour soup!

This was a great recipe. I couldn't find any chili oil at the local Walmart so I ended up using Sriracha hot sauce for both the oil and hot sauce. In the future I'll likely add a bit of corn starch or flour to thicken it up. Adding 1/2 pound of sprouted super firm tofu gave an already hearty soup even more heart. I ended up with just under 3 quarts of soup at what I figured out to be roughly $2.30 per quart. Being a vegetarian college student and finding such a low priced, healthy and easy to prepare meal was quite a pleasant surprise. Not to mention it's one of my all time favorite Chinese dishes, but priced at $6/Qt at my local eateries. Once again it is a very delicious and simple meal to make for anyone, vegetarian or not, no one will turn it away.
