Low Fat Vegetarian Corn and Bean Chowder. This vegetarian and vegan bean and corn chowder soup recipe contains no oil and is very low in fat - almost fat-free, in fact! Ingredients:

  • 2 15 ounce cans cream style corn
  • 1 28 ounce can vegetarian baked beans
  • 1/2 cup chopped onion
  • 1/2 cup thinly sliced celery
  • 1 cup vegetable broth
  • 1/2 tsp thyme
  • 1 bay leaf
  • 1/4 tsp pepper

Preparation:

Combine all ingredients, including beans in a large saucepan; bring to a boil. Cover, reduce heat, and simmer for 30 minutes. Remove bay leaf before serving.
