Ingredients:
- 1/2 pound onions, sliced into strips
- 2 tbsp butter or margarine
- 5 cups vegetable broth
- salt and pepper to taste
- 1/2 cup grated cheese
Preparation:
Brown the onions in the butter or margarine in a large soup pot, allowing to cook well for about 5 to 7 minutes.Add vegetable broth, cover, and allow to simmer for at least 20 minutes.
Season with a generous amount of salt and pepper, and add cheese, allowing it to melt slightly. Serve immediately.
