Indian Cabbage Soup Recipe

Easy and nutritious cabbage soup

A fat-free vegan and vegetarian soup recipe that is also low in calories. This healthy cabbage soup recipe gets plenty of flavor from a bit of hot sauce and some fresh herbs. Be sure to use fresh cilantro, as this cabbage soup isn't the same without it.

Ingredients:

  • 1 pound cabbage, chopped
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • dash salt and pepper to taste
  • dash Tabasco or hot sauce, to taste
  • fresh chopped cilantro

Preparation:

Combine all ingredients except cilantro in a large saucepan. Allow to simmer for at least 20 minutes.

Transfer half of the soup to a blender or food processor and process until smooth.

Recombine the soup and reheat as needed. Stir in cilantro and add additional salt, pepper and hot sauce, to taste.

Very tasty but be careful, Guest Tam

I just made it and it was great. Be careful blending hot liquid. I burned myself really badly. (No blame just an FYI) You should put only small amounts in the blender and vent the lid by removing the center of the top.
