Ingredients:
- 1/2 cup couscous
- 4 cups broccoli, chopped
- 5 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 1/2 tsp salt
- 1/4 tsp rosemary
- 1 tbsp nutritional yeast (optional)
- 1 tbsp lemon juice
- grated parmesan cheese
Preparation:
In a large pot, combine the water or vegetable broth, broccoli and couscous. Bring to a boil, reduce heat then simmer uncovered for 15 minutes or until the broccoli is soft.In a large skillet, heat the onion, garlic, and butter until soft, about 4-5 minutes.
Combine broccoli, couscous onions and garlic with salt, rosemary, nutritional yeast and lemon juice. Puree in blender or food processor until smooth.
Return to stove and simmer for 5 more minutes. Serve with grated Parmesan cheese.
