A vegetarian soup recipe for broccoli and couscous soup using healthy whole grain couscous, a bit of lemon juice and some parmesan cheese. Couscous is a naturally cholesterol-free food and is very high in protein. Vegetarian Broccoli and Couscous Soup Recipe courtesy of Fantastic Foods.
Ingredients:
- 1/2 cup couscous
- 4 cups broccoli, chopped
- 5 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 1/2 tsp salt
- 1/4 tsp rosemary
- 1 tbsp nutritional yeast (optional)
- 1 tbsp lemon juice
- grated parmesan cheese
Preparation:
In a large pot, combine the water or vegetable broth, broccoli and couscous. Bring to a boil, reduce heat then simmer uncovered for 15 minutes or until the broccoli is soft.
In a large skillet, heat the onion, garlic, and butter until soft, about 4-5 minutes.
Combine broccoli, couscous onions and garlic with salt, rosemary, nutritional yeast and lemon juice. Add sauteed onions and garlic. Puree in blender or food processor until smooth.
Return to stove and simmer for 5 more minutes. Serve with grated Parmesan cheese.
