Vegetarian Couscous with Black Beans and Vegetables

This is a quick and easy recipe for vegetarian couscous with black beans and lots of veggies. Simply toss the couscous with the other ingredients and serve! This healthy couscous recipe is both vegetarian and vegan. Recipe courtesy of Fantastic Foods.

Ingredients:

  • 1 1/2 cups couscous
  • 1 12 ounce can black beans
  • 2 cups vegetable broth
  • 1 cup chopped mixed veggies, any kind
  • 1 onion, diced
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 2 tbsp olive oil
  • salt and pepper to taste

Preparation:

Steam or microwave veggies until done.

Prepare couscous in vegetable broth as directed. Combine all ingredients, stirring to mix well. Serve hot.
