Ingredients:
- 1 1/2 cups couscous
- 1 12 ounce can black beans
- 2 cups vegetable broth
- 1 cup chopped mixed veggies, any kind
- 1 onion, diced
- 2 stalks celery, chopped
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- salt and pepper to taste
Preparation:
Steam or microwave veggies until done.Prepare couscous in vegetable broth as directed. Combine all ingredients, stirring to mix well. Serve hot.
