Quick to make but full of flavor, this vegetarian and vegan salad recipe is full of tantalizing spices and textures. Serve on a bed of green lettuce.
Prep Time: 10 minutes
Ingredients:
- 1 pound firm or extra firm tofu, drained
- 1/3 cup prepared Italian salad dressing
- 1 tablespoon curry powder
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 onion, diced
- 3 stalks celery, diced
- 1 cup walnuts, chopped
- lettuce
Preparation:
Cut tofu into 1/2 inch cubes. In a large mixing bowl, pour the salad dressing over the tofu and mix. Add remaining ingredients, except for the lettuce and combine well.Refrigerate before serving for at least one hour to allow flavors to combine.
Serve on a bed of green lettuce. Enjoy!
