This quick and easy
vegetarian ramen noodle and cabbage salad makes a great vegetarian lunch or dinner. To make it vegan, just be sure to use
agave nectar, instead of honey. For an even heartier ramen noodle salad, I like to make a little extra dressing and add a portion of tofu to the mix. Ramen noodle salad is a great Chinese-inspired vegetarian dish perfect to bring to a potluck or picnic.

- 2 heads green cabbage, shredded
- 1/3 cup sesame seeds
- 4 green onions, sliced
- 1 package ramen and seasoning packet
- 1 tbsp sesame oil
- 1/3 cup rice vinegar
- 2 tbsp honey or agave nectar
- dash black pepper, or to taste
Preparation:
In a large bowl, combine the cabbage, sesame seeds and green onion. Break the ramen noodles into small pieces, and add to cabbage.
In a separate small bowl whisk together the remaining ingredients, including the ramen flavor packet. Pour over the cabbage and noodles and toss gently to combine.
Let your ramen noodle salad stand for at least one hour before serving.
