Vegetarian Potato and Leek Soup Recipe
A simple vegetarian and vegan homemade potato and leek soup recipe. This is a basic Irish-inspired recipe is made with margarine and vegetable broth instead of cream or butter which keeps it lower in fat than similar recipes. If you like potato soup or leek soup, try this vegetarian version with both!


  • 3 potatoes, diced
  • water for boiling
  • 3 leeks
  • 1 cup mushrooms, sliced
  • 2 tbsp margarine
  • 1/2 cup vegetable broth
  • salt and pepper to taste


Boil the potatoes in water until cooked, about 15 minutes. Drain well.

In a large skillet, sautee the leeks and mushrooms in the margarine until soft, about 6-8 minutes. Add the vegetable broth and the potatoes and cook for a few more minutes.

Transfer the mixture to a blender or food processor and blend until smooth.

Add salt and pepper to taste.

Delicious as is, but a little thicker than I want my soup. Doubled the broth to one cup, and added a cup of almond milk for creaminess. (3 large potatoes, or 6 small). Also, sauteed the leeks for 10 minutes and put in the mushrooms at 5.
