Roasted Portobella Salad Recipe

Portobella mushrooms are often used as a meat substitutes because they are so flavorful. This vegetarian and vegan salad recipe places portobellas at the center of the dish to take full advantage of that great flavor! Sprinkle with a handful of sunflower seeds for a bit of protein and some crunchy texture.

Ingredients:

  • 3 - 4 portobella mushrooms, stems removed and sliced into strips
  • 1-4 tsp salt
  • dash pepper
  • 1 tbsp olive oil plus 1 tbsp
  • 2 cloves garlic, minced
  • 1 red or yellow bell pepper, diced
  • 2 bunches arugula or spinach
  • lemon juice

Preparation:

In a small bowl, combine the mushrooms, salt, pepper and one tablespoon of olive oil, and gently toss to coat. Let stand at least 15 minutes.

In a large skillet, sautee the mushrooms, garlic and peppers for just a minute or two. Remove from heat, and toss with the spinach or arugula. Drizzle with a bit of lemon juice and serve warm.
