Peanut Butter and Greens Soup Recipe
Yes, that's right, it's a vegetarian and vegan recipe for peanut butter soup! This peanut butter soup recipe is inspired by African and southern cuisine and your vegetarian kids will love it! What a great way to eat your greens - in a vegetarian peanut butter soup!

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp fresh ginger, minced
  • 6 cups vegetable broth
  • 2 tomatoes, diced
  • 1 bunch collard greens or Swiss chard, cut or torn into strips or small pieces
  • 1/3 tsp cumin
  • dash cayenne pepper (optional)
  • 1/3 tsp salt
  • 1 cup peanut butter
  • 2 tbsp lemon or lime juice

Preparation:

Sautee the onion and garlic in olive oil for about 3 minutes, or until onions start to turn clear and soft. Add ginger and heat one more minute.

Add broth, tomatoes, collards or chard, cumin, cayenne and salt and allow to cook for about 15 minutes.

Carefully add the peanut putter, and stir well to combine. Allow to cook until the peanut butter is melted and incorporated. Drizzle with lime juice just before serving.

delicious for so simple, Member lyd888

We're transitioning vegetarians trying to eat healthier but sometimes have a hard time finding grocery store ingedients that are delicious. This was so easy, and suprisingly delicious. We used swiss chard instead of the collards and the peanut butter made the greens so sweet. Great way to get kids to eat greens. This will immediately be added to our repitoire. You must make this!
