Mango and Bean Summer Salad

In his recent book Prevent and Reverse Heart Disease, Dr. Caldwell B. Esselstyn shares this low-fat, high-fiber recipe for a vegetarian and vegan mango, bean and lime salad. This would be great to serve at a barbecue or even to use as a dip for chips.

Ingredients:

  • 1 mango, peeled and diced
  • 1/2 - 1 one red onion, diced (to taste)
  • 1 15 ounce can cannellini beans, drained and rinsed
  • cilantro to taste
  • juice and zest from 1 lime
  • baby lettuce or argula

Preparation:

Combine all ingredients. Serve on a bed of baby lettuce or argula.
