Easy Vegan Artichoke Pasta Salad Recipe

This vegan artichoke pasta salad recipe is a simple meatless pasta salad with artichokes and fresh basil and parsley as well as classic pasta salad ingredients such as tomatoes and black olives.

Ingredients:

  •  
  • 2 cups cooked bowtie or macaroni pasta
  • 1 6 ounce jar artichoke hearts packed in oil, including oil
  • 3 tomatoes, diced
  • 1 cup sliced black olives
  • 3/4 tsp basil
  • 1 tbsp chopped parsley
  • salt and pepper to taste

Preparation:

Gently toss together all the ingredients, including the oil from the artichoke hearts. Add salt and pepper to taste.

Chill for at least 2 hours before serving, to allow flavors to marinate.

Very quick and delicious recipe for using up the surplus of artichoke in the pantry in a hurry. I also top it with cheese (parmesean is good).
