Spicy Creole Cole Slaw Recipe

A classic cole slaw recipe with a bit of a twist - it's got a minced chile pepper, Creole seasoning and a bit of hot sauce for a southern-inspired Creole coleslaw. If you like spicy Creole food, try this side colelsaw salad at your next summer picnic for a real treat. If you use a vegan mayonnaise, this creole slaw can be made vegan and cholesterol-free.

Ingredients:

  • 1/2 head green cabbage, shredded
  • 1/2 head purple cabbage, shredded
  • 2 carrots, grated
  • 1 red onion, diced
  • 3 green onions, diced
  • 1 red chili pepper, minced
  • 1 1/2 cups mayonnaise or vegan mayonnaise (try Vegenaise)
  • 3 tbsp Dijon mustard
  • 2 tbsp creole seasoning
  • 1 tbsp apple cider vinegar
  • 2 tbsp lemon juice
  • dash sugar
  • dash hot sauce, to taste
  • salt and pepper to taste

Preparation:

In a large bowl, toss together the cabbage, carrots, onions and chili pepper.

In a separate small bowl, whisk together the mayonnaise or vegan mayonnaise, mustard, creole seasoning, vinegar, lemon juice and sugar. Pour this mixture over the cabbage mix, and gently toss to coat.

Add a dash of hot sauce, salt and pepper, and chill for at least one hour before serving, tossing again before serving.
