This easy fresh cucumber and mint salad is vegan if you use soy yogurt. Fresh cilantro and mint tossed with cucumbers and tomatoes make for a cooling treat on a hot summer day or as an accompaniment to a spicy Indian meal.
Ingredients:
- 4 cucumbers, diced
- 6 - 8 tomatoes, chopped
- 1 green chili, deseeded and minced
- 2 tbsp chopped fresh cilantro
- 5 scallions, diced
- 1 cup soy or regular yogurt
- 2 tbsp chopped fresh mint
- 1 tbsp lemon juice
Preparation:
Combine the cucumbers, tomatoes, chili, cilantro and scallions in a bowl. Set aside.In a separate bowl, whisk together the yogurt, mint and lemon juice.
Pour the yogurt over the cucumbers and stir to combine. Chill before serving.
