Creamy Cucumber and Mint Salad

This easy fresh cucumber and mint salad is vegan if you use soy yogurt. Fresh cilantro and mint tossed with cucumbers and tomatoes make for a cooling treat on a hot summer day or as an accompaniment to a spicy Indian meal.

Ingredients:

  • 4 cucumbers, diced
  • 6 - 8 tomatoes, chopped
  • 1 green chili, deseeded and minced
  • 2 tbsp chopped fresh cilantro
  • 5 scallions, diced
  • 1 cup soy or regular yogurt
  • 2 tbsp chopped fresh mint
  • 1 tbsp lemon juice

Preparation:

Combine the cucumbers, tomatoes, chili, cilantro and scallions in a bowl. Set aside.

In a separate bowl, whisk together the yogurt, mint and lemon juice.

Pour the yogurt over the cucumbers and stir to combine. Chill before serving.
