Gingered Carrot Soup

A simple and healthy carrot soup recipe

Colorful and fragrant carrot and ginger soup is a light and soothing soup. Carrot soup with ginger is a nutritious and low fat soup recipe with just a touch of sweetness and a touch of spice. Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

  • 3 tbsp olive oil
  • 1/2 yellow onion, diced
  • 1/4 cup fresh ginger, minced
  • 4 cups chopped and peeled carrots (about 1 1/2 pounds)
  • 3 cups vegetable broth
  • 1 1/2 cups orange juice
  • dash nutmeg
  • salt and pepper to taste

Preparation:

In a large pot, sautee onions and ginger in olive oil until soft, about 3-5 minutes.

Add carrots and vegetable broth and reduce heat to medium. Allow to simmer for about 40 minutes, or until carrots are soft.

Add orange juice and stir well.

Working in small batches and using a food processor or blender, process soup until smooth.

Return to pot or serving bowl and add nutmeg, salt and pepper, stirring well. Serve with a dollop of yogurt or sour cream if desired and enjoy!

Delish and healthy, Guest

I had carrot ginger soup in a restaurant and wanted to make it at home. Although I'm not a vegan, I watch recipes for milk and creams and try to avoid them b/c I'm lactose intolerant. So when I googled for a recipe, most of them contained cream. Then I found this one and made it last night. Not only was it healthy and very low fat, it was delicious and filling. didn't miss the cream at all. It's a great winter soup and easy to make. Just make sure you put enough of the broth in the food processor when blending so it comes out ""soupier."" My first run at it was mainly carrots and so I had to mix it in with the other batches to get it to the right consistency.
