Ingredients:
- 1 16 ounce can garbanzo beans
- 1 cup cherry tomatoes, halved
- 1 2.25 ounce can sliced black olives, drained
- 2 green onions, chopped
- 1/4 cup Italian salad dressing
- 4 large lettuce leaves
- 1/4 cup crumbled feta cheese
Preparation:
In a medium bowl, combine garbanzo beans, tomatoes, olives, green onions and dressing. Mix well. Spoon salad onto four lettuce-lined plates; top with cheese.One half cup chopped green bell pepper may be substituted for the black olives. Parmesan cheese may be substituted for the feta.
