10 Minute Summer Salad with Garbanzo Beans

Plenty of texture and plenty of flavor makes this healthy vegetarian salad recipe a hit but it's so quick and easy you can have it on the table in less than ten minutes. Recipe courtesy of Bush's® Beans.

Ingredients:

  • 1 16 ounce can garbanzo beans
  • 1 cup cherry tomatoes, halved
  • 1 2.25 ounce can sliced black olives, drained
  • 2 green onions, chopped
  • 1/4 cup Italian salad dressing
  • 4 large lettuce leaves
  • 1/4 cup crumbled feta cheese

Preparation:

In a medium bowl, combine garbanzo beans, tomatoes, olives, green onions and dressing. Mix well. Spoon salad onto four lettuce-lined plates; top with cheese.

One half cup chopped green bell pepper may be substituted for the black olives. Parmesan cheese may be substituted for the feta.
