10 Minute Summer Salad with Garbanzo Beans

Plenty of texture and plenty of flavor makes this healthy vegetarian salad recipe a hit but it's so quick and easy you can have it on the table in less than ten minutes. If you like quick bean salad recipes, you might also want to check out these easy summer bean salads.

Ingredients:

  • 1 16 ounce can garbanzo beans
  • 1 cup cherry tomatoes, halved
  • 1 2.25 ounce can sliced black olives, drained
  • 2 green onions, chopped
  • 1/4 cup Italian salad dressing
  • 4 large lettuce leaves
  • 1/4 cup crumbled feta cheese

Preparation:

In a medium bowl, combine garbanzo beans, tomatoes, olives, green onions and dressing. Mix well. Spoon salad onto four lettuce-lined plates; top with cheese.

One half cup chopped green bell pepper may be substituted for the black olives. Parmesan cheese may be substituted for the feta.
