Yes, vegan hush puppies! No need to use eggs and dairy, as egg replacer and soy milk work just as well in this vegan hush puppy recipe. Made with fresh sweet corn as well as cornmeal, this fried dough balls are soft on the inside, crispy outside and just as spicy as they should be.
Ingredients:
- Egg replacer for 1 egg
- 2/3 cup soy milk
- 1 1/4 cup corn meal
- 1/2 cup flour
- 1/2 tsp black pepper
- 3 tsp baking powder
- 1 tsp sugar
- 1/2 onion, minced
- 1/2 cup sweet corn
- 4 green onions, diced
- 1 jalapeno pepper, de-seeded and diced
- oil for frying
Preparation:
Mix the egg replacer with the soy milk in a large bowl. Add the corn meal, flour, black pepper, baking powder, sugar then stir in the onion, corn, green onion and jalapeno. Mix until well combined, then form into balls.
Heat the oil over high heat in a large skillet, and add hushpuppies a few at a time. Cook until firm and golden brown.
