Ten Minute Creamed Mustard Greens

Mustard greens have a peppery tangy flavor, unique amongst green leafy vegetables. If you like mustard greens, here's a quick eand easy side dish recipe for creamed mustard greens, prepared in less than ten minutes.

Ingredients:

  • 1 15 ounce can mustard greens
  • 2 tbsp butter or margarine
  • 1/4 tsp pepper
  • 2 tablespoons flour
  • 1/8 teaspoon nutmeg
  • 1 cup milk
  • 1/4 tsp sugar
  • 1/4 tsp salt

Preparation:

Drain mustard greens in a colander, pressing with back of spoon to remove as much moisture as possible. Set aside.

Melt butter in saucepan, add flour; stir until flour is dissolved. Pour in milk. Continue to stir until smooth. Add seasonings and cook until thickened.

Fold in drained greens. Heat slowly until piping hot. Serve at once.

great, with a few tweaks, Guest gerrard

I had recieved two cans of mustard greens in a box that i got from the food pantry. Not knowing what to do with them I stumbled upon this recipe. I thought it was great with the exception of the nutmeg. After trying a few spoonfulls on some toast I added some garlic powder and it was great. Next time I will omit the nutmeg and add garlic powder.
