Vegetarian Hominy and Cheese Salad. Recipe courtesy of

Ingredients:
- 1 15 ounce can white hominy
- 1/4 cup chopped green bell pepper
- 1/4 tsp black pepper
- 2 tbsp chopped onion
- 1/4 tsp celery seed
- 1 cup diced celery
- 1 cup grated cheese
- 1/4 cup pickle relish drained
- 1/4 cup sliced olives (optional)
- 1/4 cup mayonnaise
- 1 tsp salt
- 2 tomatoes, sliced into wedges
- lettuce
Preparation:
Rinse hominy and drain well. Combine with remaining ingredients and chill well. Serve on lettuce, garnished with tomato wedges and more mayonnaise if desired.
