Ingredients:

  • 1 pound pinto or kidney beans
  • 1 onion, diced
  • 2 tsp white vinegar
  • 1/2 tsp salt
  • 1/3 cup brown sugar
  • 1 6 ounce can tomato paste
  • 4 tbsp ketchup
  • 1/4 cup margarine

These baked beans were super-simple to make and tasted fantastic! I did not miss the salt pork at all. The only change I would make would be to clarify the amount of water you need in the cooking pot, because the amount of soak water could vary. I added enough to just cover the beans, and they were perfect after a night in the crock pot. The sauce had come together nicely and everything was delicious.
