Vegetarian Creole Rice Recipe

A vegetarian Creole-style rice recipe, full of healthy vegetables, lots of Creole seasoning and fresh parsley to top it all off. No sausage needed in this healthier verson of vegetarian Creole rice! Eat it as a main dish or as a side, perhaps with some spicy seitan buffalo wings or a batch of baked tofu.

Ingredients:

  • 2 tsp vegetable oil
  • 1 cup diced onion
  • 1 cup celery, finely chopped
  • 1 cup carrots, finely chopped
  • 3/4 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 1/3 cups rice
  • 1 1/2 tsp Creole seasoning
  • 2 tbsp chopped fresh parsley

Preparation:

Heat the oil in a large skillet over medium heat. Add the onion, celery, carrots, peppers and garlic and sautee until tender, about 6 to 8 minutes. Set aside.

Cook the rice according to package directions, adding the seasoning. When the rice is done, stir in the vegetables and parsley. Serve immediately.

Excellent!, Member bulsonpa

One of my personal favorite dishes and I only made a few modifications. I saute in red wine vinegar instead of oil, decreased rice to one cup, upped the spices to 2 tsp and no garlic because my wife hates the smell of garlic. I usually make this at least once a week and throw some red beans in the mix so that I may have a complete meal.
