Gluten-Free Cheesy Rice Balls

Ingredients:

  • 2 cups cooked rice, hot
  • 3/4 cups grated cheddar cheese
  • 1 egg, slightly beaten
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp onion, minced
  • 1 1/2 tsp mustard
  • 4-5 drops Tabasco sauce
  • 1 cup corn flake crumbs
  • 2 tsp paprika

Preparation:

Combine all ingredients except crumbs and paprika. Chill. Form into small balls using 1 tablespoon mixture for each.

Blend crumbs and paprika. Roll balls in crumbs. Deep fat fry at 375 degrees F. until golden brown, about 3 minutes. Drain on absorbent paper.

Makes about 2 1/2 dozen.
