At a Glance Cauliflower and Pepper Hash RecipeCauliflower and Pepper Hash Recipe INGREDIENTS:
PREPARATION:Steam the cauliflower in a small amount of water for only a few minutes. It should still be crisp, just lightly cooked. In a large skillet, heat the oil on high. Once the oil is hot, add the onion and green pepper and cook until the onion is translucent, about 5 minutes. Turn the heat to medium and cook for another minute, then add the cauliflower. Stir well. Add the pepper and stir well. Add the water and cook a minute longer. Do not overcook; the cauliflower should remain firm. Reprinted with permission from The Compassionate Cook Cookbook. |
