No need for cheese in this vegan bruschetta recipe. Great northern beans add a colorful white topping instead of mozzarella to make a healthy vegan appetizer of white bean bruschetta.

Ingredients:
- 1 16 ounce can Great Northern Beans, rinsed and drained
- 1 large ripe tomato, diced
- 2 tablespoons chopped fresh basil or 2 teaspoons dried basil
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/4 teaspoon black pepper or red pepper flakes
- 24 slices (1/2-inch thick) French or Italian bread, grilled or lightly toasted
Preparation:
In medium bowl, combine all ingredients except bread; mix well. Spoon mixture on bread and serve.
