Stuffed Apricots with Cream Cheese Appetizer


This summery recipe uses fresh apricots, stuffs them with cream cheese and tops them off with pistachios for a quick yet tasty gourmet vegetarian appetizer or hors'd oeuvres.   • 4 ounces cream cheese, softened
  • 12 fresh apricots, halved
  • 12 cup pistachios, finely chopped


Stir cream cheese until smooth; pipe or spoon into apricot halves.

Sprinkle tops with pistachios. Serve as an appetizer, snack, or dessert.

Makes 12 servings.
