Stuffed Apricots with Cream Cheese Appetizer

This summery recipe uses fresh apricots, stuffs them with cream cheese and tops them off with pistachios for a quick yet tasty gourmet vegetarian appetizer or hors'd oeuvres. You can make this vegetarian recipe vegan by using a vegan cream cheese. If you like fresh apricots, then you'll appreciate this gourmet cream cheese stuffed apricots recipe.

Ingredients:

  • 4 ounces cream cheese, softened
  • 12 fresh apricots, halved
  • 12 cup pistachios, finely chopped

Preparation:

Stir cream cheese until smooth; pipe or spoon into apricot halves.

Sprinkle tops with pistachios. Serve as an appetizer, snack, or dessert.

Makes 12 servings.
