Vegetarian Apple Stuffing Recipe

Vegetarian Apple Stuffing Recipe. Nothing says fall like fresh crisp apples - and Thanksgiving! Combine these two fall flavors with a simple vegetarian and vegan apple stuffing recipe that is sure to be a hit. See also: More vegetarian stuffing recipes

Ingredients:

  • 1 cup carrots, grated
  • 1 cup celery, diced
  • 1 cup diced onion
  • 1/4 cup margarine
  • 1 tsp poultry seasoning
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 8 cups dry bread, cubed
  • 2 apples, finely chopped
  • 1/2 cup chopped walnuts
  • 1 1/2 cups vegetable broth

Preparation:

Pre-heat the oven to 375 degrees.

Melt the margarine in a large skillet over medium heat. Cook the carrots, celery and onion until tender, about ten minutes. Stir in the poultry seasoning, pepper and salt.

In a large bowl, combine the bread cubes, apples and walnuts, then add the carrot mixture. Add enough water or vegetable broth to moisten, tossing gently.

Transfer to a casserole dish, cover, and bake for 20 to 30 minutes.
