Ingredients:
- 1 cup carrots, grated
- 1 cup celery, diced
- 1 cup diced onion
- 1/4 cup margarine
- 1 tsp poultry seasoning
- 1/4 tsp pepper
- 1/2 tsp salt
- 8 cups dry bread, cubed
- 2 apples, finely chopped
- 1/2 cup chopped walnuts
- 1 1/2 cups vegetable broth
Preparation:
Pre-heat the oven to 375 degrees.
Melt the margarine in a large skillet over medium heat. Cook the carrots, celery and onion until tender, about ten minutes. Stir in the poultry seasoning, pepper and salt.
In a large bowl, combine the bread cubes, apples and walnuts, then add the carrot mixture. Add enough water or vegetable broth to moisten, tossing gently.
Transfer to a casserole dish, cover, and bake for 20 to 30 minutes.
