Ingredients:
- 3 sweet potatoes or yams
- garlic powder
- salt
- pepper
- ginger powder (optional)
- curry powder (optional)
- olive oil
Preparation:
Slice sweet potatoes into coin size pieces, approximately 1/2 inch thick.In large skillet, heat a thin layer of olive oil and place a single layer of sweet potato coins in oil. Sprinkle the potatoes with salt, pepper, garlic, and curry and ginger if desired.
Allow sweet potatoes to cook until slightly soft, about 3-5 minutes, then flip, sprinkling other side with salt, pepper, garlic and spices. Continue cooking coins, adding more oil as needed.
Keep sweet potatoes warm in oven on low temperature until ready to serve. Enjoy!
