Fry up some vegetarian Italian "sausages" to add to a normal stir-fry recipe. A few bell peppers might also go well with this basic stir-fry. Try it alongside toast for breakfast.
- 2 tsp olive oil
- 1/2 onion, chopped
- 3 cloves garlic, chopped
- 2 vegetarian Italian "sausages", sliced thin
- 1 tbsp soy sauce
- 1/2 cup sliced mushrooms
- 1 cup chopped broccoli florets
- 1 medium tomato, diced
Sautee onions and garlic in olive oil for a minute or two, then add vegetarian sausage slices. Allow both sides of the sausage to brown. This takes just a minute or two on each side.
Add remaining ingredients, and heat, stirring frequently, just until veggies are cooked.
