Ran out of skewers? No problem! Just toss all your veggies on some foil, add a few seasonings, wrap it up and toss the entire packet on the grill. This foil-grilled vegetable packet recipe has a few Asian flavors in it, and would go well with rice or noodles, but they're also delicious just on their own. A great idea if you're grilling for vegetarians or vegans at your next barbecue (or even just for folks who want to grill low-fat and healthy!).
Ingredients:
- 1 head broccoli, chopped
- 1/2 medium onion, chopped
- 1/3 cup sliced mushrooms
- 1/2 chop snow peas
- 1/2 tsp fresh ginger, minced
- 2 cloves garlic, minced
- 4 tsp olive oil
- 2 tsp sesame oil
- 4 tsp soy sauce
Preparation:
Pre-heat indoor or outdoor grill.
Combine all vegetables, then divide in half. Place half the vegetables on a large sheet of heavy-duty aluminum foil. Add half of the ginger and half of the garlic to each of the foil packets, then drizzle each with half of the olive oil, sesame oil and soy sauce.
Wrap foil packets tightly, making sure to seal the edges well so the liquid doesn't escape. Place on the grill for about 10 minutes, poking occasionally to test for doneness. Vegetables should be soft and well-cooked.
Carefully open the packets, as the steam inside will be very hot.
