Braised Collard Greens Cajun-Style

Easy Cajun-style Vegetarian Collard Greens

Collard greens are a nutrient rich leafy green. When cooked and spiced properly, they make a tasty and nutritious accompaniment to just about any meal. These cajun-style collard greens with tomatoes have a bit of a kick, but you could reduce the amount of spices for a tamer dish. This healthy Cajun collard greens recipe is both vegetarian and vegan.

Prep Time: 5 minutes

Cook Time: 18 minutes

Total Time: 23 minutes

Ingredients:

  • 1 large bunch collard greens (about 1 lb) rinsed and chopped
  • 1 yellow onion, diced
  • 2 cloves garlic, diced
  • 4 medium sized tomatoes, diced OR 1 14 oz can diced tomatoes, drained
  • 3/4 cup vegetable broth
  • 1/2 tsp red pepper flakes
  • 1/2 teaspoon hot sauce
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • dash cayenne (optional)

Preparation:

Sautee onions and garlic in olive oil. Add vegetable broth and collard greens and cover. Allow to cook for about 6-8 minutes, until greens are slightly soft. Add remaining ingredients and cook for another 6-8 minutes, until greens are done, stirring occasionally.

missing that ""something"", Guest wanzie

This was a good and easy recipe but even with the ""kick"" it seemed to be missing something. I think next time I would saute in a chopped fresh green chili with the onion and the garlic. I will make this again though, collards are yummy!
