Vegan Cajun Collard Greens
Collard greens are a nutrient rich leafy green. When cooked and spiced properly, they make a tasty and nutritious accompaniment to just about any meal. These cajun-style collard greens with tomatoes have a bit of a kick, but you could reduce the amount of spices for a tamer dish. This healthy Cajun collard greens recipe is both vegetarian and vegan.

Prep Time: 5 minutes

Cook Time: 18 minutes

Total Time: 23 minutes


  • 1 large bunch collard greens (about 1 lb) rinsed and chopped
  • 1 yellow onion, diced
  • 2 cloves garlic, diced
  • 4 medium sized tomatoes, diced OR 1 14 oz can diced tomatoes, drained
  • 3/4 cup vegetable broth
  • 1/2 tsp red pepper flakes
  • 1/2 teaspoon hot sauce
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • dash cayenne (optional)


Sautee onions and garlic in olive oil. Add vegetable broth and collard greens and cover. Allow to cook for about 6-8 minutes, until greens are slightly soft. Add remaining ingredients and cook for another 6-8 minutes, until greens are done, stirring occasionally.

Great New Twist on Collards for Me, Guest Blueschiz

I have really enjoyed this recipe and have made it for large gatherings and potlucks often. I use way more garlic and often canned tomatoes and I add a little salt, which helps. I actually like it better without the veg broth and with just water, though I do it both ways depending on what I have on hand. For potlucks I serve the red pepper on the side. Oh, I also leave out the hot sauce because I can taste the vinegar and I don't like it in this.
