Ingredients:
- 1 medium large eggplant
- salt
- 1-2 tbsp good quality olive oil
- 1-2 tbsp balsamic vinegar
- 3 cloves garlic, minced and crushed
- 1/2 tsp red pepper flakes (optional
Preparation:
Peel the eggplant, and slice into 1-inch thick rounds. Sprinkle with a bit of salt, and allow to sit for at least 20 minutes, then rinse and gently pat dry.
Pre-heat oven to broil.
Place eggplant slices on a lightly greased baking sheet. Place in the oven for 4-5 minutes.
Remove from oven and drizzle or brush with olive oil and balsamic vinegar. Sprinkle with garlic and red pepper flakes.
Broil for another 4-5 minutes, until done.
