Vegan Roasted Red Pepper Pesto Recipe. Have fun experimenting with adding different flavors to pesto for a whole new taste! Related video: How to Make Pesto.

Ingredients:

  • 2/3 cup canned roasted red peppers, drained
  • 3 cloves garlic
  • 1/3 cup walnuts or pine nuts
  • 3/4 cup fresh basil, packed
  • 3 tbsp nutritional yeast (optional)
  • 1/4 cup olive oil
  • dash salt and pepper

Preparation:

In a blender or food processor, process all ingredients until smooth, adding more oil if needed.

Serve over pasta or as a dip for crackers.
