"Meaty" Vegetarian 7 Layer Dip

A vegetarian seven layer dip recipe using ground beef substitute (try SmartGround brand) for a "meaty" texture, along with other traditional 7 layer dip ingredients such as refried beans, salsa, guacamole and cheese. Vegetarian seven layer dip makes a popular vegetarian party appetizer food.

Ingredients:

  • 1 15 ounce can vegetarian refried beans
  • 1 package vegetarian ground beef substitute
  • 1 cup salsa (approx)
  • 2 cups shredded cheese
  • 1 cup guacamole
  • 1 cup sour cream
  • 1/4 cup chopped green onions (scallions)
  • 2 tbsp chopped fresh cilantro

Preparation:

Spread a the beans in a layer about 1/2 inch thick on a serving platter. Cover the beans with a layer of crumbled mock meat substitute. Spoon a layer of salsa over the mock meat.

Sprinkle about half the cheese over this, then spread the guacamole over the cheese, and the sour cream over the guacamole.

Cover with remaining cheese, then sprinkle with green onions and cilantro. Serve warm or chilled.
