Vegetarian Gravy with Fresh Herbs

This basic vegetarian and vegan gravy recipe uses fresh herbs, including sage and parsley, to get lots of flavor. You'll need a good gravy to go with a vegetarian or vegan lentil loaf recipe, mashed potatoes, and of course, with Tofurky on your vegetarian Thanksgiving!

Ingredients:

  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • 1/2 tsp fresh parsley, minced
  • 1/2 tsp fresh sage, minced
  • 1/4 tsp thyme
  • 1/4 tsp pepper
  • 2 tbsp cornstarch, dissolved in 2 tbsp water
  • 2 tsp nutritional yeast (optional)

Preparation:

Bring the vegetable broth to a simmer in a medium pot or large skillet. Add the soy sauce and herbs. Reduce heat to a simmer, then slowly add the cornstarch and water mixture, stirring constantly to thicken.

Allow to simmer for a few minutes, until thick, and add nutritional yeast if desired.
