These five ingredients are really all you need to make an excellent and easy baba ghanoush (eggplant dip). You can thin it out with a bit of water or olive oil if you'd like, top it with parsley, or really, it's perfect just as it is. Serve your eggplant baba ghanoush dip with pita bread of course.
- 1 eggplant
- 2 cloves garlic
- 3 tbsp tahini
- 3 tbsp lemon juice
- 1/2 tsp salt
Prick the eggplant several times with a fork. Bake until soft, about 45 minutes.
Allow the eggplant to cool, and scoop out the flesh, discarding the skin.
In a blender or food processor, combine the eggplant and the remaining ingredients and process until smooth. Enjoy!
