Make a gourmet homemade vegan mayonnaise with fresh basil. Vegetable oil and soy milk is used instead of eggs in this dairy-free and egg-free homemade gourmet basil mayonnaise recipe. Be sure to follow the instructions and add the oil very, very slowly, as this is the only way to get a homemade vegan mayonnaise to thicken properly.
Ingredients:
- 1/4 cup lemon juice
- 1/2 cup soy milk
- 1/4 tsp salt
- 1 tsp Dijon mustard
- 6 tbsp vegetable oil
- 1/3 cup chopped fresh basil
- dash cayenne
Preparation:
Put all the ingredients except the oil in a blender or food processor and process on low speed.
Gradually add the oil a few drops at a time until the mixture thickens. Continue blending until smooth and creamy. Chill before serving; mayonnaise will thicken as it cools.
