This recipe makes four grilled sandwiches.
- 4 portobello mushrooms
- olive oil
- salt and pepper
- 1 French baguette, sliced into fourths
- fresh mozzarella cheese
Slice baguette pieces in half to create sandwich bread, and brush the inner side with olive oil. Place on the grill for just a minute, until lightly toasted.
Spread a layer of pesto on the baguettes, add a medium thick slice of mozzarella cheese and add grilled portabella mushrooms.
