Grilled portabella pesto and Mozzarella sandwich

Use grilled portabella mushrooms to create a simple French bread sandwich with a layer of pesto and fresh Mozzarella cheese. If you can't find fresh Mozzarella cheese, a similar medium white cheese would work, such as provolone or asiago cheese.

This recipe makes four grilled sandwiches.

Ingredients:

  • 4 portobello mushrooms
  • olive oil
  • salt and pepper
  • 1 French baguette, sliced into fourths
  • pesto
  • fresh mozzarella cheese

Preparation:

Brush portabella mushrooms generously with olive oil on both sides, and season with salt and pepper. Place on a medium hot grill, and cook for three minutes on each side, just until soft. Keep warm.

Slice baguette pieces in half to create sandwich bread, and brush the inner side with olive oil. Place on the grill for just a minute, until lightly toasted.

Spread a layer of pesto on the baguettes, add a medium thick slice of mozzarella cheese and add grilled portabella mushrooms.

Serve immediately.
