Siddhi's recipe for homemade pineapple salsa goes well with potatoes, corn chips or even banana chips, she says. This spicy and sweet salsa is sure to be a hit and is easy enough to prepare in just a few minutes. Ingredients:
- 3/4 can diced pineapple, drained and rinsed
- 1 bunch green onions
- 1 jalapeno pepper
- 1/4 bunch cilantro
- 3 tbsp lemon juice
- salt and black pepper to taste
- 2 tbsp spiced olive oil, or, use regular olive oil and add chili powder to taste
Preparation:
Rinse the diced pineapple in a colander, then gently toss together with the rest of the ingredients. You can dice the pepper, onions and cilantro by hand, or, pulse in a blender or food processor a few times until desired consistency is reached.
Siddhi says that this pineapple salsa should sit in the refrigerator for at least 30 minutes before serving, in order to let the flavors marinate and mingle. Gently toss again just before serving.
