Here's a simple way to make a simple and healthy homemade dairy-free and vegan salad dressing from lime zest, lime juice, olive oil and a little agave nectar (also called agave syrup) as a natural sweetener. This agave nectar salad dressing is a healthy homemade alternative to store-bought salad dressings. 

Beyond just salads, I use salad dressings in a number of different ways, so I try to always keep some on hand. Salad dressings are great in a pinch for adding to steamed fresh vegetables, adding to any leftover quinoa, (or to make a quick quinoa salad or bean salad, too), or, use this lime-based agave salad dressing to make a simple rice salad or something or other sooner or later.

All of the ingredients are vegetarian, vegan and gluten-free, and, if you use cold-pressed oil and a completely raw agave syrup (read the label to check and see), it is suitable for anyone on a raw vegan food diet as well. If you want to swap out the agave nectar for honey, you may, though the recipe will not technically be vegan any longer, since most vegans avoid honey.

Ingredients

  • 2 tablespoons lime zest, from 2 limes

  • 1/3 cup lime juice

  • 1/4 cup agave nectar

  • 1/4 cup olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon freshly ground black pepper

Steps to Make It

  2. In a small bowl, combine the lime zest, lime juice, agave nectar, and olive oil and use a fork or a small whisk to whisk everything together until fully emulsified.

  3. Add salt and pepper to taste, and whisk vigorously again to combine.

Instead of using a small bowl and a whisk, I also sometimes like to just place everything together in a mason jar, cover, and then shake it all up until fully emulsified. It's kind of fun!
