Italian Style Vegetarian Rice and Beans

Italian style vegetarian rice and beans

Using just five ingredients, you can serve this easy vegetarian rice and beans dish with Italian seasonings as a side, or, add some sauteed tofu or seitan to make it a main meal. Recipe courtesy of Bush's® Beans.

Ingredients:

  • 1 14.5 ounce can diced tomatoes with Italian herbs (do not drain)
  • 1 14.5 ounce can Great Northern or cannellini beans, drained
  • 2/3 cup instant rice
  • 1/2 tsp Italian seasoning
  • fresh pepper to taste

Preparation:

Place all ingredients in medium saucepan. Cook 3-4 minutes, covered, over medium-high heat. Uncover pan and continue cooking 2-3 minutes, or until rice is tender. Dish is slightly saucy when completely cooked.

I thought this was really yummy and really simple! I used instant brown rice to make it a bit healthier, so it took a few minutes longer to cook (but still really fast). This is now one of my staple meals that I make when I'm short on time. I tend to add a lot more herbs than it says, and I use fresh because I happen to have my own herb garden ;)
