To use this as a true raw food recipe you'll have to crack open a coconut to get the water. Otherwise there are several new brands of canned coconut water on the market these days (this makes me smile!). Whole cucumbers and pineapples blend up to a very watery consistency thereby eliminating the use of a juicer for this drink (aka 'whole juice'). Combined with mint and coconut water, this beverage rehydrates while it pleases! If the pineapple and/or coconut water are not quite sweet enough you may wish to add a dash of agave nectar.

Ingredients:
- 1 large cucumber, peeled and chopped
- 2 cups pineapple cubes (about 1/4 pineapple)
- handful mint leaves
- 2 cups fresh coconut water
Preparation:
Blend everything together on high speed until there are no chunks. Pour into a glass and enjoy the fresh wonder of it all!
