Southwestern Summer Salad - A raw food diet recipe

A summer salad suitable for the raw food diet using all fresh raw food and vegan ingredients, including fresh tomatoes, bell peppers, corn and seasoned with lime juice. If you'd like a bit of spice, add a bit of a fresh minced chili, deseeded, of course!

Ingredients:

  • corn kernels from 2 fresh ears of corn
  • 1 red or yellow bell pepper, chopped
  • 1 large or 2 medium tomatoes, chopped
  • 4 green onions, chopped
  • 1/2 avocado, chopped (optional)
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh cilantro
  • juice from 2 limes
  • 1 tbsp cold pressed neutral tasting oil, such as olive or flax (optional)
  • sea salt to taste (optional)

Preparation:

Combine all of the fresh raw ingredients, and gently toss with lime juice, oil and a dash of sea salt, combining well.

Best served after the ingredients have chilled together for at least one hour, to allow the flavors to mingle. Gently toss again, just before serving.
