The classic green goddess dressing is a creamy mayonnaise-based sauce filled with fresh herbs that has become famous of late thanks to many brands bottling it and putting it on grocery store shelves. But if your dietary preferences or needs mean you must stay away from dairy, eggs, or other animal-derived products, delicious green goddess dressing doesn't have to be out of your reach. Our delicious, raw, and vibrant take on this herby sauce as decadent as the original, plus it keeps longer in the fridge because it has no anchovies or dairy. Creamy tahini gives the sauce the perfect texture while apple cider vinegar and lime juice add the tang. Fresh parsley and garlic add some flavor, while the agave nectar brings the perfect touch of sweetness to balance out the flavors. Serve this dressing over any green salad or use it as a dip for crudités or raw chips. You need just 5 minutes and a blender.

If you're not familiar with the concept of raw eating, it just means that the foods that are consumed are raw and have never been heated up to over 118 F (48 C). This means that when eating a raw diet you can enjoy all fruits and vegetables, sprouted and soaked grains and legumes, raw seeds and nuts, some dried fruits, seaweed, and some fermented foods like kimchi, raw-nut-butters, and cold-pressed oils. Our raw dressing checks all the boxes, as the olive oil must be cold-pressed and there are agave syrups or nectars that have not been heated up above the allowed temperature when processing. Raw snacks and ingredients are more available nowadays than a few years back, and just a quick search online will take you to specialized stores where you can find anything you might need.

Use this creamy dressing in any raw salad or bowl of sprouted grains or legumes, adding some raw pepitas or sunflower seeds on top for a delicious crunch.

Ingredients

  • 1/4 cup raw tahini

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon lemon juice

  • 2 cloves garlic

  • 2 tablespoons water

  • 1 tablespoon raw agave syrup, or nectar

  • 3 tablespoons cold-pressed olive oil, or cold-pressed flax seed oil

  • 1/4 teaspoon salt

  • 1 teaspoon minced fresh parsley, optional

Steps to Make It

  1. Gather the ingredients.

  2. Combine all ingredients, except parsley, in a blender or food processor, adding more or less liquid as needed. Add parsley and pulse until finely minced and well combined.

  3. Goddess dressing will thicken quite a bit in the fridge, so add a bit more liquid as needed

  4. Enjoy!

Tip

Goddess dressing also makes a great dip, so add a bit less liquid and use it as a veggie dip, if you'd like.
