The Spruce / Eric Kleinberg
These raw food diet lettuce wraps have a hint of Mexican spiciness to them, hence the "burrito" simile. Made with ripe avocados, tomatoes, onions, jalapeno peppers, corn, and spices, with some freshly squeezed lime juice added for that extra "tangy" taste, then wrapped in lettuce leaves, these wraps make a great entree for a raw food meal or a raw food potluck. Because they're so easy to make and tasty, they're a great raw transitional food too. They're vegetarian, vegan, and naturally gluten-free, of course.
Serve these wraps with some fresh fruit and a smoothie to round out the meal.

Tips
- Use the freshest ingredients you can find when making these wraps to get the ultimate flavor.
- Fresh iceberg lettuce seems to work the best for making lettuce wraps.
Recipe Variation
- Instead of lettuce, you can try using nori seaweed or cabbage as the wraps for these "burritos."
- Make a Vegan Balsamic Vinaigrette Salad Dressing and drizzle it on the mixture before wrapping, or use the dressing to dip the "burritos" into when eating.
What Is the Raw Food Diet?
The raw food diet is made up of unprocessed raw vegan foods that haven't been heated above 115 F. Foods that are allowed to be eaten on this diet include raw fruits and vegetables, sprouts, nuts and seeds, fresh herbs, raw spices, and seaweeds. Freshly blended juices made out of fruit and veggies, and herbal teas, are part of the diet regime, too.
