Raw lettuce wraps. Thanks for your help on this, Tua!

These lettuce wraps have a hint of Mexican spiciness to them, hence the "burrito" simile. These wraps make a great entree for a raw food meal or a raw food potluck. Click here for more raw food diet resources and recipes.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 2 very ripe avocados
  • 3 tomatoes, diced
  • 1/2 jalapeno pepper, diced
  • 2 tbsp yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • kernels from one ear raw corn
  • 2 tsp fresh lime juice
  • 6-8 large lettuce leaves

Preparation:

In a medium sized bowl, mash the avocado.

Add remaining ingredients and stir until well mixed.

Spread 2-3 tablespoons of this mixture onto lettuce leaves and wrap. Enjoy!

This is this first raw food recipe I have ever tried, and OMGoodness with easy quick and delicious recipes like this I could be a 100% Raw in no time!! I wrapped mine in lettuce and they were crunchy like tacos. My teenage sons were scarfing these and didn't even touch the tortilla burrito's that were on the table after one bite, now I had to beg them to take a bite, but that was it, they pushed aside their traditional American burrito's and were all over these baby's!! YUMMY!! Ty so much for sharing!!
